hi!

here is the recipe for the cobbler from sunday night's dinner. make it now!! it's amazing.
i adjusted the flour & sugar so i have written here just how i made it...

peach & blueberry cobbler
recipe from The Kitchen Diaries; adjusted slightly by me

fruit:
ripe peaches - 3
blueberries - 3-1/2 cups
the juice of a lemon
natural cane sugar - heaping teaspoon
spelt flour - heaping tablespoon

crust:
spelt flour - 1-1/2 cups
a pinch of salt
baking powder - 2-1/2 teaspoons
natural cane sugar - heaping teaspoon
butter, cut into small pieces - 6 tablespoons
sour cream - 4 ounces

oven at 400ºF. mix flour, salt, baking powder, sugar and butter until it resembles breadcrumbs. slice peaches and toss with blueberries, lemon juice, sugar and flour; pour into shallow pie dish/tin. mix sour cream into crumb mixture. break off balls of the dough and flatten them lightly; lay them on top of fruit; dust with a bit of sugar. bake for 25 minutes until it is golden and fruit is bubbling.

*if your fruit is not sweet add more sugar.*

i discovered you and all of your projects at the beginning of this week and i'm still dizzy from all the beauty and inspiration... i study architecture and love my trade, but i have a passion for paper goods, photography and graphic design, and often find myself daydreaming about living off of that.

Just made this with peaches and cherries in place of the blueberries and oh, it was divine. Also used 1/3 cornmeal and 2/3 regular flour in place of the spelt flour and had a wonderful little crunch. Thanks so much for the recipe. Adored by all over here.
